Lamington Cocktail Recipe
- Baileys Irish Cream
- Vanilla essence
- Raspberry jam
- Melted chocolate
- Desiccated coconut
- Rim your cocktail glass with melted chocolate and then immediately dip it into the coconut.
- Add a dollop of raspberry jam (we mixed two heaped teaspoons of jam with about one teaspoon of hot water to make it a little runnier) to the bottom of your glass.
- In a martini shaker filled with ice add about 1/3 cup milk, 1 shot of Baileys and a splash of vanilla essence.
- Shake vigorously.
- Carefully pour into your glass, keeping to the edge so you don't mix with the jam too much.

When I think of Australia Day, I can't help but think of lamingtons.
The history of lamingtons
To be honest, I'm not quite sure what history is. Some say that lamingtons came from New Zealand and others say that they originated in Queensland somewhere around 1901. I think the story that I like the most is the one where this sponge cake treat was named after Lord lamington who served as the Gov of Queensland from 1896 to 1901 although I do like the one where it is named after Baron lamington. Honestly I just like the idea of Lord lamington and Baron lamington.
